Recipe of the Day: Chipotle Chicken Salad

YUM!  This salad looks so delicious!!  This recipe comes from Red Gold Tomatoes; you can get more recipes at the Red Gold website.

Chipotle Chicken Salad

1/4 cup extra virgin olive oil
1 teaspoon honey
Salt and black pepper to taste
2 cups cooked chicken, cubed
6 cups romaine lettuce, torn
1 cup shredded Monterey Jack cheese
1 avocado, peeled and cubed
1 (28 ounce) can Red Gold® Culinary Classics Diced Tomatoes with Chipotle, drained
or 2 (14.5 ounce) cans Red Gold® Petite Diced Tomatoes with Chipotle, drained
1 green onion, sliced
1/2 cup creamy ranch dressing


  • Combine oil, honey, salt, black pepper and chicken in a medium bowl; set aside.
  • Combine lettuce, cheese, avocado, RED GOLD® CULINARY CLASSICS DICED TOMATOES with CHIPOTLE, green onion and chicken mixture in a large bowl; toss to combine. Refrigerate until ready to serve.
  • Just before serving add ranch dressing to salad mixture; toss to combine. Garnish with crushed tortilla chips if desired.
