It is Sunday, which means Shana and I (Dawn) will be off the blog except for any match ups or urgent deals we happen to come across. I thought it would be a nice morning to share my favorites pancake recipe which my grandma gave me years ago. When she gave me the recipe it only called for 2 Tbls. of sugar, but my family likes them a little sweeter :) I hope you enjoy these as much as we do!
Fluffy Griddle Cakes
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
¼ cup sugar
1 egg
1 ½ cups milk
2 tablespoons melted shortening or oil
Mix all ingredients together. Pour batter onto griddle/pan over medium heat (adjust heat as needed so you do not burn them). Flip the pancakes when the tops become bubbly and the edges look dry. Cook a little longer until finished.
*This recipe makes medium thick griddle cakes. For thinner cakes use 1 ¾ cups of milk.
