Recipe: MEDITERRANEAN LEMON CHICKEN-Using Ronzoni Pasta

MEDITERRANEAN LEMON CHICKEN


Ingredients:
1 pkg. RONZONI GARDEN DELIGHT PENNE RIGATE
1 pound skinless, boneless chicken breast halves
¼ cup lemon juice
¼ cup chicken stock
1½ tsp minced garlic
1 tsp grated lemon rind
Chopped parsley
DIRECTIONS:
Cook pasta according to package directions.  Cut chicken breasts in half lengthwise and then crosswise 3 times to make eight pieces per breast half.  Brown chicken in a large nonstick skillet generously coated with vegetable spray. Add lemon juice, chicken stock, minced garlic and 1 teaspoon grated lemon rind. Simmer until chicken is tender. Toss with hot cooked penne and chopped parsley.  Makes 6 servings.
