Sorry I couldn't find my camera when we made this last night!! We love making Asian food (we have a wok but you can use a BIG frying pan). When we make a spicy dish, we take out a portion of the cooked chicken and set it aside for our girls. We also use Jasmine rice (just what I prefer) and I use a rice cooker. I LOVE MY RICE COOKER! All you do is double the amount of water in comparison to the amount of rice and click the cook button and 30 minutes later(well shorter if you make less but we make a TON), PERFECT RICE!! This is really an inexpensive and quick and yummy meal to make!!
1 lbs boneless Chicken breast
2 T cooking oil
1/3 cup of peanuts
4+ dried red chili peppers ( I bought a bag for under $3.00 at Walmart we have been using for over a year, since they are dried they don't go bad and this bag is going to last us FOREVER)
1/3 cup Kung Pao chicken sauce ( I buy this at Target)
Cut Chicken into bite sized pieces (about 1" pieces)
Stir-Fry chicken in Wok or skillet in cooking oil.
Once chicken is white throughout, add peanuts and chili peppers
Note: For a hotter dish, you can squeeze the peppers before cooking or just add more.
Let peanuts & peppers cook (about 2 minutes) then add sauce.
Once dish is heated throughout, you are ready to serve with rice
Variation: add chopped green bell peppers with the peanuts.

Wow!! How big was the bag of peppers you got @ Wal-Mart?? And do they still sell that size?

I was at Walmart and checked it was half a pound (which peppers do not weigh much so that is ALOT OF PEPPERS) and it is only $2.88!!!! Look in the Mexican/Asian/Ethnic food section at Walmart!! So yes this is readily available!
