One of my favorite meals to cook I thought I'd share with you. It's quick and easy and I typically have the ingredients on hand.
Taste of Homes, Au Gratin Sausage Skillet
1 lb smoked kielbasa or Polish Sausage, halved and sliced (Kroger $5.00/2)
2 tablespoons vegetable oil (I put mine in water and drain)
1 box au gratin potatoes (if I only have scallop I use them)
2-1/2 cups water
1 pkg (8 oz) California blend veg
1 to 2 cups shredded cheese
In a skillet, cook sausage in water or oil until browned; drain. Add the potatoes with contents of sauce mix and water. Cover wand cook over medium heat for 18-20 minutes or until the potatoes are almost tender, stirring occasionally.
Add veg; cover and cook for 8-10 minutes or until potatoes and veg are tender. Sprinkle with cheese. Remove from the heat; cover and let stand for 2 minutes or until the cheese is melted. Yield: 4 servings
(Can substitute Turkey Sausage or Healthy Choice & Fat Free Cheese)
